Crunchy Salad

Lately I have been craving texture in my food, often munching on apples, cucumber and carrots, I was craving some crunch!

This salad sure is crunchy, nutritious and easy! It is full of anti-oxidants phytonutrients and fibre, it would be delicious with a piece of salmon or poached eggs.

What you'll need:​

Salad base -

  • Half red cabbage

  • Quater white cabbage

  • Green cucumber

  • One broccoli head

  • Sprinkle of

    • Pistachio

    • Sesame seeds

    • pumpkin seeds

    • Sunflower seeds​

 Dressing -

  • 200mL of white wine vinegar

  • 75mL of olive oil

  • 2 tablespoons of tahini

  • 1 tablespoon of honey

  • Crack of black pepper

  • Pinch of sea salt.

What to do:

  1. Thinly slice purple and white cabbage and place in a large salad bowl.

  2. Cube cucumber into roughly 1cm

  3. Break up/cut broccoli florets into small pieces and place in your bowl.

  4. Massage and mix the ingredients

  5. Add all the dressing ingredients into a small bowl and mix well until combined

  6. Pour the dressing over your salad and massage/mix again

  7. Place in the fridge for at least 45mins before serving.

  8. Sprinkle nut mix over salad

  9. Enjoy.
