Crunchy Salad
Lately I have been craving texture in my food, often munching on apples, cucumber and carrots, I was craving some crunch!
This salad sure is crunchy, nutritious and easy! It is full of anti-oxidants phytonutrients and fibre, it would be delicious with a piece of salmon or poached eggs.
What you'll need:
Salad base -
Half red cabbage
Quater white cabbage
Green cucumber
One broccoli head
Sprinkle of
Pistachio
Sesame seeds
pumpkin seeds
Sunflower seeds
Dressing -
200mL of white wine vinegar
75mL of olive oil
2 tablespoons of tahini
1 tablespoon of honey
Crack of black pepper
Pinch of sea salt.
What to do:
Thinly slice purple and white cabbage and place in a large salad bowl.
Cube cucumber into roughly 1cm
Break up/cut broccoli florets into small pieces and place in your bowl.
Massage and mix the ingredients
Add all the dressing ingredients into a small bowl and mix well until combined
Pour the dressing over your salad and massage/mix again
Place in the fridge for at least 45mins before serving.
Sprinkle nut mix over salad
Enjoy.
