Lemon Bliss Balls

I haven’t made bliss balls in years! Recently I was travelling to a picnic so needed something that would travel well; other guests were baking sweet things so I thought, “well, I need something that will be refreshing after lots of sweet treats” cue lemon bliss balls. The cashew nuts made them taste creamy - almost like a lemon cheesecake, people were pleasantly surprised with the subtle zing once they took a bite.

What you’ll need:

  • 150 grams (1 cup) raw cashew nuts

  • 175 grams (1 cup) Medijool dates pitted (any other date will work too)

  • 3/4 cup shredded coconut

  • 1/4 cup chia seeds

  • Zest from 1 lemon

  • Juice of 1 lemon

  • Tablespoon of coconut oil

What to do:

  1. Add the cashew nuts, dates, shredded coconut, coconut oil & chia seeds to food processor and pulse until well combined.

  2. Add the lemon zest + juice and mix until all the the ingredients come together to form a dough. 

  3. With slightly damp hands, roll half tablespoon of the mixture into balls, then roll each ball in shredded coconut.

The beauty of bliss balls is you can have a base mix and add any flavour - cacao, oat & cinnamon, carrot cake, beetroot, the list goes on!
