Salmon & Zucchini Patties

I saw some salmon mince on sale and thought ‘I can make that work’! These are super easy, quick and full of nutrients, even my 1 year old loved them.

These would be an easy snack, quick breakfast or simply enjoyed with a salad.

Now, there is coriander in these patties, so if you are one of those people who is all “yuckkkkkk, devil!, how dare you ?!🤢”, relax, you can still make these work, swap out the coriander for dill - a lovely match.

So lets get to it…

What you’ll need:

  • 500g of salmon mince.

  • 1 grated zucchini

  • 1/4 of a diced purple onion

  • Handful of coriander

  • 1 egg

  • 1/2 cup of bread crumbs - I had some sourdough that was a couple of days old, so blitz that up

  • Salt and pepper to taste

  • Olive oil

  • Avocado to serve

What to do:

  1. Heat a pan on medium heat and add a generous drizzle of olive oil.

  2. Combine all ingredients in a bowl

  3. Once pan is hot, roll salmon mix into small ball and flatten off the top and bottom. In terms of size, bigger than a golf ball, smaller than a tennis ball.

  4. Fry on each side for around 2-3 minutes.

  5. Once cooked, serve on a plate with salad, and sliced avocado

If you’re feeling really fancy, crumble some goats feta over the top when serving

These would be a great appetiser for a party with an avocado mayo dipping sauce

Making extra and freezing some for next week.
